Tasty Turkey Meat Loaf

There is nothing better than comfort food on a chilly evening or when you just need a little food lovin'. This recipe hits that spot perfectly.

  1. 2 Lbs ground turkey (I used lean as extra lean will produce a dry loaf)
  2. 1 c gluten free Panko crumbs (quick cooking oats can be used as well)
  3. 1/2-3/4 of a large onion, chopped
  4. 3 cloves garlic, chopped
  5. 2 eggs
  6. 1 TBS oregano
  7. 2 tsp basil
  8. 2 TBS Coconut Amino's (I used 1 TBS regular flavor & 1 TBS garlic flavor)
  9. Ghee or butter for the glass pan (I used about 1/2 TBS and spread it around)
  10. 1/4-1/2 c ketchup for the top
  11. 1/4 tsp each of salt and pepper
  1. Preheat oven to 400°
  2. Saute the onion and garlic in melted ghee or butter with the salt and pepper, set aside to cool
  3. Combine all ingredients, except the ketchup, in a large mixing bowl
  4. Once thoroughly mixed, place into a greased 2L glass baking dish
  5. Cook for 30 minute, pour off about 1/2 the juices and spread ketchup over the top
  6. Bake for 30 minutes longer
  7. Remove from oven & let cool for 10 minutes before slicing
