Rice and Lentil Bake

Ingredients
  1. 1 medium yellow onion, chopped
  2. 1 shallot, chopped
  3. 1 c uncooked brown rice (wild rice works too)
  4. 1 c uncooked lentils (any color)
  5. 1 14oz can roasted diced tomatoes
  6. 4 c organic vegetable broth
  7. 1 TBS each of fresh rosemary and basil
  8. 1 tsp fresh oregano
  9. Salt and pepper to taste
Instructions
  1. Preheat oven to 350°.
  2. In a deep baking pot with a lid, combine everything and stir gently.
  3. Bake, covered, stirring every 30 minutes until bubbling and brown.
  4. Serve warm.
Notes
  1. I like to blanch kale or spinach and serve the rice and lentils on top
