Protein-Rich Pancakes

Adding quinoa to these pancakes make them a heartier version of traditional flour pancakes.

  1. 1 large, very ripe banana
  2. 1 cup rolled oats
  3. 1 cup pre-cooked quinoa
  4. 2 cage free, pasture raised eggs
  5. 2 TBS raw almond butter
  6. 3/4 cup almond milk
  7. 1 tsp Ceylon cinnamon
  8. 1 tsp quality vanilla
  9. pinch of sea salt
  10. coconut oil or Ghee for skillet
  11. Maple syrup, Yacon, Coconut Nectar or Honey to pour on top
  1. Heat oil or ghee in skillet over medium heat
  2. Combine all ingredients into your blender, blend until smooth
  3. Pour batter from blender into skillet and cook until done in the middle and golden brown around the edges
  4. Enjoy hot with your favorite toppings
  1. Fresh organic berries are always a great topper to pancakes.
