Grain Free Belgian Waffles or Pancakes

Ingredients
  1. 3 eggs
  2. 1 cup raw cashews soaked* overnight (pecans or walnuts can also be used)
  3. 2/3 cup unsweetened almond milk (Milk of choice)
  4. 3 TBS virgin coconut oil
  5. 1/4 tsp sea salt
  6. 3/4 tsp baking soda
  7. 3 TBS coconut flour
Instructions
  1. Preheat your Belgian waffle maker or pancake skillet
  2. Combine "milk," eggs, soaked and drained nuts, and melted coconut oil in your blender jar. Blend until smooth
  3. Add the salt, baking soda and coconut flour blend until incorporated
  4. Grease your waffle iron or pancake skillet, pour batter onto iron/skillet
Notes
  1. *It is important to soak the nuts so they blend smooth and you don't end up with nut pieces in the batter.
  2. I always double the batch as my boys and husband will blow through 6 waffles in no time, plus I really like to have leftovers.
  3. If batter is too thick add more "milk"
