Easy Veggie Bowl

Bowls have become very popular because they are so easy to throw together. Try this recipe for a clean eating quick lunch or dinner

Ingredients
  1. 1/4 c cooked quinoa
  2. 1/2 c roasted veggies (I used broccoli & Cauliflower)
  3. 1 hard boiled egg, sliced
  4. 1 radish, sliced
  5. large pinch of sprouts (I used broccoli, but any sprouts work)
  6. pinch of raw pepitas for crunch
Instructions
  1. Assemble by adding all ingredients in your bowl, drizzle dressing of choice on top (my carrot ginger goes well with this), mix and serve
Notes
  1. I am a big fan of prepping and batch cooking one day a week, so I can easily throw these type of meals together during the week when schedules are rushed. With this in mind all of my ingredients above were prepped ahead of time.
