Chocolate Avocado Pudding

  1. 2 ripe avocados
  2. 1/2 c organic unsweetened cacao powder
  3. 1/4-1/2 c raw honey (for a lower GI you can use Stevia)
  4. 1 1/2 tsp pure vanilla extract
  5. 1/4 c raw cacao nibs
  6. fresh berries of choice
  1. Cut, pit and spoon the avocado into your blender or food processor. Cut up the avocado a bit to make blending easier
  2. Add all other ingredients, except the cacao nibs. Blend until smooth
  3. Taste and add more sweetener if needed
  4. Spoon into a bowl or individual serving dishes
  5. Cover with plastic wrap and chill for at least 1 hour
  1. Before serving sprinkle each with cacao nibs and a few fresh berries for added color and yumminess
